By the QUARTER or HALF
The most economical way to buy grass-fed beef! A half feeds an average family for a year with premium steaks, roasts, ribs, shanks, stew meat, liver and ground beef.
Cost is $3.50 per lb (hanging weight) + cost of processing.
Quarters range from 170-200 lbs (hanging weight) of meat and Halves range from 340-400 lbs (hanging weight) of meat.
Please keep in mind there is a cost of processing which averages $230 per quarter depending on your desired choice of cuts and the size of the animal.
WHAT CUTS WILL I RECEIVE?
Working closely with our butcher, together you determine the best way to cut the beef quarters and halves in order to give you the highest quality cuts, the greatest possible yield, and a good variety of cuts to keep your beef dinners interesting.

The cuts you will receive typically include:
* Steaks
* Roast
* Ribs
* Ground beef
* Stew meet
* Briskets
* Liver, Heart, Tongue
* Shanks (soup bones)
* Tallow (lard) per request

Steaks are typically cut to 1” thick and are 1 per package for large steaks and 2 per package for smaller steaks. Roasts are typically 3-4 lbs, but roast sizes can vary depending on size of the animal. The butcher will determine the best way to divide a particular piece of meat into multiple roasts in the interest of maximizing your yield.

Ground beef comes in 1 lbs. packaging. And also, 2 lbs. packaging by request.
Pickup Instructions:
The butcher we use is Lonsdale Country Market. Located at 123 Main Street S, Lonsdale, MN 55046. Phone: 507-744-2356. You can arrange to pick up the beef when it’s ready at the butcher.

All balances are due in full at the time of pickup and are based upon the animal’s hanging weight plus the cost of processing.
